Default Oatmeal topped with Rhubarb

I was on the crapper last night and reading the current issue of Men's Health and saw an idea of what to do with Rhubarb. Since we have an abundance out in the garden, I am looking for other ways to use it.

3 cups Rhubarb, chopped.
1/3 cup brown sugar
1 TSP grated orange peel
Splash of water

Put in a pan, simmer until tender for about 15min. I took my eye off of it for a few minutes and rather than simmering until tender, it became a globby mess.

So rather than topping the oatmeal with it, i just mixed it in. It was really tasty, although a bit too sweet for me. I think it's because I used more than I should have.

Definitely a keeper to liven up plain oatmeal.

I make wine with it. Strawberry rhubarb wine. Blueberry rhubarb jam, strawbarb jam, rhubarb crisp...
Sadie is asleep on me right now, so no recipes...

yeah there is a customer at the shop who brings in her rhubarb wine. Twice now. Unfortunately neither were very good....

Done right it is really good. Wrong... not so much. I had one awesome batch and one not so great.

It makes a good flavoring for mead, too.

My favorite rhubarb recipe is one of Jamie Oliver's.



Rhubarb and Custard kinda Souffle.

It uses store bought custard as the base. I whip up a batch of scratch vanilla pudding with good results. The custard he's talking about is a stirred custard, so very little difference.
