Default Homemade Turkey Soup

Last night was my first forray into making homemade turkey soup, using the carcass for stock. I don't know why, but for some reason I was intimidated by the process. Holy cow, it couldn't have been easier!

Took the carcass and covered it with water. Put in some celery stalks, some bok choy, salt, pepper and let it simmer for hour or so.

Then just left it as is until we went to bed and then put it in the garage.

This morning I took out the bones and strained out the rest of the stuff. Then added carrots, diced celery, chopped up some more bok choy, lots of salt and pepper and brought it all to a boil and let it simmer for awhile.

Then added leftover turkey meat (a lot of dark too since we had that left over) and some wide egg noodles and simmered for awhile more.

Holy crap, it's absolutely delicious! Even my kids gobbled (pun intended) it up, as well as my niece and nephew for lunch.

I honestly think the secret to the success was the bok choy. It added a certain depth to it and gave it a distinct flavor.

Mmmmmmm, we even had it for dinner tonight and there's still a ton left over.

I think doing this (as well as hosting Turkey dinner for the first time) has inspired me to try more new things (regarding cooking).

Nice. I was going to make mine today, but will do it tomorrow. We went bowling this afternoon. I need lots of time for that badboy to boil. I love it.

Substitute low fat/low salt chicken stock for the water and you will be blown away. Turkey soup is amazing.

I made mine tonight - used leeks and brown rice too. I had to freeze half of it, there was so much.
